Super Salad & Tomato Nutrition

This is a super salad I made last night:

layer on a plate in this order:

  • baby spinach
  • broccoli slaw mix
  • finely crushed walnuts
  • finely chopped red onion
  • garden (the best!) tomatoes sliced
  • croutons
  • fresh basil chopped & sprinkled on top (doesn’t everything taste better with fresh basil?!)
  • drizzle poppy seed dressing on salad

Tomatoes are known to be one of the word’s healthiest foods. Tomatoes are an excellent source of vitamin C, vitamin A, and vitamin K. They are also a very good source of molybdenum, potassium, manganese, dietary fiber, chromium, and vitamin B1. Also, tomatoes are a good source of vitamin B6, folate, copper, niacin, vitamin B2, magnesium, iron, pantothenic acid, phosphorus, vitamin E and protein.  The lycopene in tomatoes acts as a powerful antioxidant that helps to protect the body from free radical damage.
